The finest quality Espadín agave is harvested from the regions of Tlacolula and Yautepec.
The heart, or pina, is roasted using an artisinal method with mesquite wood in a horno conico de piedra, (stone oven) for three days, giving it that characteristic smoky aroma and taste.
The piña is ground by hand using a molina de piedra (stone mill) to extract its juices.
The juices are fermented in wooden barrels.
After fermentation, Creyente is distilled in small copper stills.
Following the distillation process, the mezcals from both regions are blended together to create an extraordinary new mezcal.
